Could someone shine the light on this for me?

Why preload a ROM with apps that are easily available when they could possibly have future issues?

I know many ROMs have this. I just happen to run UD and had issues updating LauncherPro on UD8 and now with 1.0.0 I've lost GVoice.

(Could not install update, uninstalled via TiBU, could not install from market, could not restore from TiBU)

Usually the preinstalled apps are because of requests from everyone on forums like this one. If done correctly, the apps will be in the local folders rather than the system folders.

However, if you find a ROM you like, but do not want all the apps preinstalled, it is easy to change it. Simply open (do not unzip) the ROMs zip file. Delete the apps you do not want preinstalled. Done.
Then when you flash using the update.zip method, they will not be preinstalled.
