Ok so my Liberty ROM is up and running but I wanted to switch to another theme my question is will I loose all my apps and how my screens are setup

and is there a write-up to change the dock images like (phone, app drawer ect)

No you wont lose anything.. it will simply change out the images in the frameworkres... quite a simple process really. Good luck
