Amazon Phone Purchase Question

I have never purchased a phone on Amazon. I "assume" the phone is not activated to a phone number before it ships, other wise you would be without service for the ship time.

If that is the case, can I order a phone today, and not activate it until Christmas, to give as a present?

You are correct. It's not activated until you receive it and turn it on with the SIM card installed. This can be done at any time.
