There are all kinds of reasons you might want to run a custom rom like CyanogenMod. The first and main reason most people run a custom rom like CM is to get rid of their OEM skin overlay and replace it with a much more stock feeling UI. One big reason I have always loved CM is the inclusion of the theme engine. With the theme engine you can quickly and easily change the entire appearance of your phone with just about no effort.
While CM probably won't have a version of Nougat out for a while you can now at least install a Nougat inspired theme.
