Android Noob needs assistance

Greetings all!

This is my first post as an Android user, so please don't flame me.
I came from using a WM VZW TP2 and was very familiar with the
operating system and all of the tricks. However, I've decided to
enter into the "Android Zone". Now for the questions:

Email
1.) In the native email application on the Fascinate, I can not seem
to find the cc or bcc fields. Am I missing something? I'm presently
using Commontime mNotes 5.0 for corporate email.

Launcher
1.) Pro's or Con's ADW vs. Launcher Pro?
2.) Will using an advanced Launcher have any ill effects with the OEM UI?

OEM Calander
1.) How does one set the default reminder time?
2.) Able to set colors for Busy, Out of Office, etc?

Unfortunately I can only help with the the first and second group of questions.

Email: If you click the settings button while composing a new message, you should have an option to add cc/bcc.

Launcher:

Launcher pro pros: fast swiping through pages, scrollable docks, constant updates, fun social networking/calendar/browser bookmark widgets
cons: sits on top of OS so is sometimes killed by native task manager (called a screen redraw)

ADW pros: opensource, also pretty fast, a tad more customizable than LP,
cons: no extra widgets (if you can call it a "con"), also susceptible to redraws

EDIT: BOTH are very viable alternatives to TouchWiz, and it comes down to personal preference which you use. I am currently just using stock TW because I like the ability to rearrange the app drawer. But I have used both ADW and LP and must say they are both very good.
