Boot mode problems

In an attempt to flash my phone back to stock (which I haven't been able to make work so far, BTW) I followed a procedure for flashing an SBF "correctly" on another site and powered on while holding the up arrow key. The phone booted straight into AP Flash mode, which was the object in the procedure. The problem is, now it boots that way every damned time I power on the phone! I can get around it by powering on while holding the M key to get the menu but that's a pain. Does anyone know how to undo the apparent default boot mode selection I did?

Another thing - when I boot into recovery, all I get is the exclamation mark in a triangle with the green android in front of it. That wasn't happening before, either. Any ideas? I'm an Android noob seeking advice.
