bring 2.0.1 to stock 2.1??

I had some problems on my droid and restored it to stock, non-rooted 2.0.1

I want to upgrade to stock 2.1 but it won't let me do a system update. it claims im "Up to date" even though im not..

whats an easy way to bring it back to stock 2.1?
