Camera ISO and Exposure settings

So those of you who have messed with the camera's ISO and exposure settings....which settings work best for outside photos in bright sunlight? Cloudy days? And finally is there any benefit or drawback to setting the camera's megapixel setting up to 8 from the default setting of 6 megapixels?
