Custom kernel?

Ok since the bootloader is locked on the bionic naturally i havent splashed in to the world of custom kernels can anyone tell me what a custom kernel can do an what the benefits are cuz all i know is custom kernels can overclock the phone but is that really all a custom kernel can do?
