Do not touch file list--after Root?

I recently got a D2G. I'm looking into root so I can remove/freeze bloatware. I hide them in LP but a couple apps keep un-hiding. At any rate, is there a list somewhere of the file that should not be touched after root and those that can safely be removed/frozen/hidden?

Frozen shouldn't present an issue. You could also use Root Explorer and change the file names in /system/app from .apk to .bak and that'll do the trick.
