You can just rename the file extension from.apk to .zip and unzip it. When you're done just rezip and rename to .apk
Most archiving programs(winrar, 7-zip) can actually unzip and .apk the way it is but if you've never done it it's easier to just rename.
I'm not even sure you can find the version number in there but I think it would be in there somewhere.
