Droid X Rooted / revert to stock ROM

So, I rooted my Droid X (which I got yesterday) last night and installed liberty as it seemed to be one of the most prominent themes.

But I find it kind of irritating, I was hoping to restore to the stock droid but leave the droid rooted so that I could remove the bloatware again.

If there are any recommendations of alternative ROM's/methods of installing it over liberty 2.0.1 I would be really appreciative, the only guide I've found is

And it state whether I would have to re-root or anything to that effect.
 
Ended up using that guide to just flash back to stock then I rerooted, I'm still curious however if there is a way for me to install a custom ROM that just has the bloatware removed or something to that effect...

I dont use this as my primary phone and it doesnt have service, ideally I'd like to get rid of everything except for some wifi apps and some networking setup apps that way I could theoretically use this for networking jobs (I run an IT company)
