I have CM6 final on my Droid which has ADW for the launcher, but i installed LauncherPro since I prefer that one. Is there a way to safely remove it so it's not running and consuming memory?
Go into system/app with Root Explorer and delete ADW, safe and easy, remember though, if you don't have a launcher in the system and have to wipe data for any reason you will not have a launcher to go home to, it would be a good idea to put Launcher Pro in the system/app folder
That's it, the downside to it is, when Launcher Pro updates the update will go into data/app and your previous version will stay in system/app so after every update you will have to move the newer version into system/app and overwrite the previous version
hmm... i cannot find the main .apk file for launcher pro. where are all the apps or apks stored when apps are downloaded/installed? i had no problem finding /system/apps, though.

found it and i found what i was doing wrong! i'm using ES File Explorer which doesn't immediately let you explorer all the system partitions. Root Exploration has to be enabled in its settings. Poof! Now I can see data/apps when I go to the root directory.
Alright, I copied Launcher pro to /system/apps and I moved ADW to my sdcard (backup) than rebooted.
Remember, every time LP updates you will have to make the move again or you will be wasting space with a launcher pro in system/app and data/app...I just looked in mine while checking to see what the .apk was called and sure enough I had one in both from the update this morning
