How to remove Eclipse ROM and try another ROM

I'd like to try a different ROM. What is the typical procedure? Can I just reboot into safestrap and load a new ROM after wiping cache etc? Do I have to wipe, then install a stock ROM? I don't change ROM's that often so I don't want to screw it up.

This Eclipse ROM was great initially, but the camera sucks and now my Paid weatherbug app doesn't work because of some blur process that's been removed.

SS 3.xx allows you to install up to 4 ROMs on different "slots". If you feel the to remove that ROM, boot into SS and delete that ROM slot.
