HOW TO:Root, Install Clockwork, Remove Bloatware, Integrate Google, Un-root, and more
I compiled this for someone on here, so why not make a thread? It includes a safe bloatware removal list and compiles all instructions in one place:
Ok. Here it is. First, download LauncherPro or ADW. I would recommend LauncherPro. You need ROM Manager Premium, Titanium Backup donate, Root Explorer, SetCPU, and a file manager like Astro to install the APKs.

It can also be bought from the Market. The others also need to be purchased or downloaded from the Market.
SWITCH FROM TOUCHWIZ TO LAUNCHERPRO/ADW. IT IS NECESSARY.

ClockworkMod Recovery Installation(uses ROM manager): Clockworkmod installation how to for windows / *nix - xda-developers
After the CWM install, I would recommend going into ROM Manager, choosing "backup current ROM," and letting the backup run. That way you can reverse anything from this point on. It may also be a good idea to backup frequently as you move down the list, just in case.
Install Google Maps from the Market. Then, install this: http://db.tt/xX0UyS0 It's a car home app with Google Maps in place of Bing/VZ Navigator.
Then, go into Titanium Backup. Click problems to download a good version of Busybox. Then, go into Backup/Restore. Edit Filters. Switch from All to System and click Apply. To freeze an app, click it and choose Freeze. Clicking it again and choosing Defrost will un-do this. Here is a safe list to freeze(requires donate):

411 Search
Allshare
Backup Assistant
Blockbuster
Browser(install Dolphin HD, it defaults to Google search)
Buddies Now
Car Cradle
City ID
Daily Briefing
MobileIM
My Files
NFS Shift

SNSAccount, which is Facebook. If you use FB, be careful... freezing this can cause syncing issues.

I would advise against removing the "My Files" if you want to use a song/mp3 as an alarm, as you use My Files to select the song.
Be careful freezing Mobile Hotspot, Backup Assistant, and anything with TW or TouchWiz in the name. It may have undesirable consequences on your phone. Make a backup and be prepared to restore or use Odin.
Why freeze? You won't be able to update to Froyo without these apps installed. Freezing "hides" them and allow you to easily restore them when the update rolls out. Apps WILL stay frozen after a reboot.
After that, use Root Explorer. Navigate to /system/app. Scroll through and find I500_BingSearchAndroid_07152010.apk. Long press on it and choose "Rename." Add ".old" to the end.
Then, install this: Got it! Google widget works now. Bing is dead! - Android Forums And you will have Google integrated with your phone.
Lastly, if you want the News and Weather Widget, use Astro to install this: Genie Widget from Nexus One Dump - xda-developers
Now reboot. Make sure you still use LP after the reboot. Say goodbye to the bloatware and you'll also have root and superuser along with Google and the search and genie widgets. Plus, you can easily restore the bloatware if need be.
Now, install Voodoo: [RELEASE] Voodoo (v0.2) ext4 lagfix for Fascinate! Now with AOSP boot animations! - xda-developers Voodoo is a true "lag fix." Make a backup and install the zip through CWM. Before installing it, remove any lag fix you have installed. After you install it, do no attempt to flash anything. You have been warned.
