Must Have is always highly subjective. I can list all sorts of apps that are must haves for me that probably aren't relevant to you. If you just want popular app suggestions there are tons of existing threads in this very subforum that you can refer to.

The simplest app that I miss immediately when I change ROMs is Screebl.

I love Checkbook for managing my expenses. You can set up multiple accounts and expense categories. It's like my own personal mini general ledger. I even export an expense spreadsheet at the end of each month.
