New to root. Need explanations.

I am completely new to rooting but I know a little about it by reading these forums. Still have questions though. What exactly does it mean to "root" a phone? And when rooting is done what would one be able to do? Also, would I still be able to use Sense after rooting? I love Sense so I really don't want to give it up.
