Create a new folder name with a dot "." in front of the name, example ".hideme".
This will hide them from the Gallery and other such apps.. when you want to see them go to the folder and remove the dot and it will then show in the Gallery etc..
Just remember to change it back when you are "done"

Shouldn't have to do that if you "back" out of the Gallery app (not just hit the home button) and then reopen it again (after changing the directory), it scans everytime you open it.
If you use the Home button to "leave" the Gallery app, you really didn't close it (uses more memory, bad habit). Try it and you will notice when you "open" it again when "exiting" with Home, it will remember where you were(specific folder, pic, etc), i.e. still running.
So i used file manager and created a folder in the sd card folder named ".data" and put my pics in there. It works great...BUT when I plug my phone into my macbook and try to find that folder, i cant......even if i search for it, no results....any ideas?
