Saving documents to folders?

First, what a great Forum. I am a new Droid user and have learned so much reading through all the FAQ's and forum posts.

I have searched for an answer to my question but haven't found it and was hoping someone could help me out.

I am wanting to save several Word and Excel files in a folder on my home screen but I don't see how to do that. Perhaps there is an app that will allow me to do this?

By default Quickoffice saves all documents to my SD Card to a folder but I want to be able to access these documents quickly from my homescreen.

Long press blank screen. That should give you a folders tab. Recent documents would bring you close as a tab on a home screen. The only other way I can tell without loading an app (which I don't know if there is one...probably though) would be to be rooted and run Astro, which allows for shortcuts to any folder.
