Well there sure is on my Droid 2 and there should be on your Incredible but I can't step you through that.

When you go into settings while on messenger do you see a box that says text messaging. Click on that if you do and scroll down until you see Message Signaturel.

Again, this is for the D2. I don't know for sure about the Incredible.

When I saw this, I thought that certainly there would be an option for text sigs but apparently its a known issue and there is an appeal of sorts to Google about this.

Check out this thread on another Droid forum and there is a link to add your vote to get this changed.
