playing around with the settings and came across "sleep" under "display".

what does sleep mode actually do and which setting should i set it at?

15 seconds / 30 seconds, etc..

That's how fast the screen will timeout and go black. I keep mine at 2 minutes. Some like a shorter period for battery assistance.

so if you set it at 30 seconds and you are surfing the web on your phone it will automatically timeout and go black?

If inactive then yes. If you are scrolling or doing something it won't timeout.
