Stock apps.

Hi. I just rooted my phone and was wanting to uninstall stock apps. Other than system stuff what is necessary? For instance will bad things happen if I uninstall Amazon MP3 and Skype mobile?

I'm using launcher pro and they won't stay hidden. Also. I want the space.
