I put a zagg glass screen protector on my note 5 and it doesn't go to the edges in any direction. Is that OK or will it affect the way it protects the screen from cracks? I'd hate to shatter it simply because I have a bad protector.

As for your question, does the Note 5 have slightly "curved" in edges of the screen? The Note 4 did and I know that caused an issue with glass screen protectors. I think that most makers of those protectors started making them smaller so they didn't go completely to the edge, since they couldn't curve with the glass of the screen.
In any case, you've still got a large portion of the screen protected. A hard drop on the corner, especially without a case, may still do some serious damage to the screen, but I doubt that not having every single tiny bit of the screen covered will affect the result.
