What apps can be safely removed?

Well I am moving from USCC over to VZW and want to check out the Spectrum 2 as it should suit my needs just perfectly. I will be rooting and custom recovery, but I mostly enjoy root access to de bloat the stock software. I prefer to run it as lean as possible so curious what I can remove. I won't have my phones till next week to play with but want to start doing some research in advance. Also, how well do these work for hot spot access for laptops?

They seem to be pretty good for use as a hot spot, the speed is decent with 4G as well.

What I like to hear, though I use my phone more and more for stuff it is nice to check email, fb and such from my laptop
