After hard reset what apps should I delete/uninstall?

While that is true, it is important to only disable 1-2 items at a time. That way, if you have trouble with the phone after disabling apps, it's easy to determine the cause. Disable 1-2 apps, then test the phone for at least 6 hours, including running everything you normally use.

Most apps display that message when you disable them. I have been disabling apps for years and never had a problem. If there ever is a problem just go back in and select Enable

I've disabled a few and nothing seems affected so far.
 
I know I'm a bit late, but here's a list of what I've disabled on my Verizon S8 Edge without an issue.
  • Amazon Shopping
  • Android System WebView
  • ANT Radio Service
  • ANT+ Plugins Service
  • Bixby Global Action
  • Bixby Service
  • Bixby Voice Stub
  • Briefing
  • Caller Name ID
  • Cloud
  • Dictionary
  • Gmail
  • Google Text-to-speech Engine
  • Google VR Services
  • Hancom Office Editor
  • Message+
  • My Verizon
  • My Verizon Services
  • OK Google Enrollment
  • Samsung voice input
  • Secure Folder
  • Security & Privacy
  • Verizon Location Agent
  • Voice Service
  • Voice Service Framework
  • Write on PDF
  • YouTube
Many of them are only on Samsung devices, but it's a good start as to what you can likely disable without a system issue. There are also multiple games and Google apps that can simply be uninstalled.
