Even though this step has unroot in the title, you're basically following it to get back to 2.01 (a must in order to root).

This step is for
reference only and demonstrates how to flash Pete's ROMs using the Sprecovery / Nandroid method. Remember to do a backup first in case something goes wrong. Note that you will have to use the
Nandroid method for now as you will be updating from 2.01.
EDIT**** IF YOU FOLLOWED STEP 2 ABOVE YOU WILL NOT NEED TO USE THE NANDROID METHOD BECAUSE YOU WOULD HAVE ALREADY BEEN ON 2.1. INSTEAD YOU CAN SIMPLY USE THE UPDATE ZIP METHOD.

This will get you to Pete's 1.0. Notice he doesn't have any instructions as he assumes you know how to do it following the method in step 3.
EDIT*****PETE RECOMMENDS BEFORE UPDATING TO 1.0 THAT YOU WIPE THE DATA AND CACHE IF USING THE UPDATE.ZIP METHOD (USING SPRECOVERY) EVEN IF YOU ARE ON 2.1. THIS ENSURES A SMOOTHER UPGRADE. YOU CAN DOWNLOAD TITANIUM BACKUP FROM THE MARKET TO MAKE EASY BACKUPS OF YOUR DATA AND APPS BEFORE WIPING.
REMEMBER: WIPING DATA/CACHE MEANS ALL DATA IS GONE!!!!! YOUR PROGRAMS WILL REAPPEAR AFTER YOU SIGN IN TO YOUR GOOGLE ACCOUNT ON THE NEW ROM
ALSO PLEASE READ THROUGH THE POSTS REGARDING THESE ROMS AS NEW INFORMATION IS ALWAYS APPEARING.
Also note that there could be easier ways to accomplish this and I'd recommend still looking around places like Alldroid.org etc.
