Check the screen shots on DroidLife It looks like you should have date and temp in the white area.

Yea I looked at those and the text was black. Not sure why it's not showing up right now...

Figured it out. Go in to beauitiful widgets the menu>configure and find the text color option

Then change it to black. Worked like a charm

Question: why is this all white underneath?

Are you sure you have your weather set-up to display. It needs the location in order to put things into the area showing white. Also, as Spaz pointed out, you need to adjust the font color, to make it contrast to the background and be readable.
