Can anyone explain how to turn music off without shutting down my phone?

If you are playing music with the included music player, just press the onscreen pause button and it stops. If you currently don't have the music player visible, drag down the notification window from the top of the screen, which will have a listing to take you back to the music player, then pause.
 
If you're referring to the music player that came with the Droid, you simply need to press the pause button/icon and the music stops.

If you truly want to shut down or close out that music player apparently, you will need to use an apparently killer, available free on the Android Marketplace.
 
Thank you. That was a quick response :). I do have the music player that comes with the Droid, and I was using the Pause icon. I guess I thought that just paused it without actually turning it off. But, if thats the way it works, I can do that :)

Just keep in mind that your Droid will automatically shut down apps if additional resources and/or memory is needed.
