sometimes less is more. Don't install apps that you don't really want. Uninstall apps you don't use, and keep the ones that run in the background to a minimum.
The rest is up to you. How far do you want to go with it? Root, overclock, etc...
There are plenty of apps we all like, and it is really a lot of preference. There are no apps that I can think of that are a MUST have.

It really depends on what you plan to use it for.
For me my first must have app was oftseen. Its an app that allows me to dial by gesture. Ex,I want to call my wife,I draw a C on screen, it dials her. Since then I have added a few widgets( screen icons ) that allow me to quickly turn on/ off settings like wifi, Bluetooth, etc instead of going into the menu
