Despite the tremendous capabilities of the phone, the first thing I would ask before going in depth trying to help them is what do they want their phone to do that it doesn't. If someone doesn't feel the need for more from their phone, they aren't going to put in as much effort to learn how to utilize more features. Go from there. If they want their phone to do something specific, start pointing them towards apps. If they don't know, show them some stuff on your phone. Don't try to shove things in their faces that they don't care about.
For example, I have a friend who uses Facebook only through the browser. I asked him if he used the browser or the app, and at first he didn't even know what I meant. He then figured out that he only uses it through the browser because he "doesn't know how to use the app." He also had no interest in figuring it out (I offered to help) because he could do what he wanted to through the browser.
Just my opinion on the subject.
