Depends on which launcher you use. With LP, touch and hold the dock bar icons and it will ask if you want to change the icon.

With ADW, touch and hold on home screen. Create custom shortcut.

How do these get installed? Just unzip onto the SD Card?

I've always unzipped on a PC then drag the folder/s you want onto SD. Then use the appropriate launcher method to install them on dockbar or home screen shortcuts.

Anyway you can make a Contact Icon?

I second this request. I am wanting to do a yellow/black theme on my phone and would love to have a contact icon for the dock.
