Download the ROM, name it update. If you get a warning about changing the file extension rename it update.zip. Put it on the root of your SD card, reboot the phone into recovery, make a simple nandroid backup, wipe your system and data caches 2-3x each, install the update, reboot the phone. Once you've rebooted the phone make sure it'll boot to the home screen.
Now, on your computer, download the Google apps, rename the file the same as you did the ROM, put it on the SD card and make sure it replaces the ROM file. Now reboot into recovery, make a simple nandroid backup, install the app pack, and then reboot. If it boots to the home screen you should be good to go.
If at any time you get a boot loop, pull the battery and try to reinstall the file you just tried to install from within recovery. If you still can't get the phone to boot, do a simple nandroid restore. If you need to go back to stock, do an advanced, check all the boxes, and select the first backup you made.
