Curious what your fav apps are. That is, the non-stock ones you use the most.

For me:
Splashtop
Dropbox
WWF
Pulse
Hill Climb Racing (wish I could stop this one)

Let me know of any joy that I'm missing! :)

So hard to just name 5.

1) Droid Forums (I get any brownie points?)
2) ClockSync
3) ROM Toolbox Pro
4) Root Checker Pro
5) Root Cleaner
6) BusyBoxPro

TB is a given, I am BIG on DEV SUPPORT

Do you have to use the root - specific apps a lot, or is that more of a once and done operation? I haven't found a reason to root...yet.

For the most part I use the root apps, much like other apps, the difference is the amount of control. The one app listed as #2 ClockSync, it overrides Verizon's system time and replaces it with time collected from an Atomic clock. Usually the difference is 10ths of a second depending on the running length. The other app BusyBoxPro I can temp unroot which hides superuser and supersu, however leaves BusyBoxPro and still take OTA very safely. These apps are simply used as wanted, whether its installed and once, done or tweak this or that.

Since, you mention you haven't found a reason to root, here's an app that may be interesting and it does not require root. The app is All About Root . Enjoy.
