I have the orig Droid w/ many purchased apps. If I get a new phone (D2 or X), how do I transfer those purchased apps to the new device?

All apps you download, paid or not, are linked to you Google account. When your activate the new phone, the Market will sync with your account and you will get your apps back. The same thing would happen if you do a factory reset of your current phone.

Of course, if you want to take out a little extra insurance, you can use Astro to back up all of your apps to your SD card, then back that up to your computer.
