I have a bunch of folders on my TB. Camera Shots, All photos, All Videos and a couple others that I created on my DX.

i just copied the folder off of my d1 onto my TB. what is the folder directory structure for the TB to understand the folders?

SDcard/DCIM/100MEDIA(that's the large folder). You can then separate them into smaller folders if you want.

i have about 10 folders. I put them all in the 100media folder, still nothing. just pictures shows them fine.

In Gallery, Click menu. Do you see a show/hide albums option? Try rebooting too. I've had to do that after adding lots of pictures.

rebooted immediately after moving them via es file explorer. i do see that option but it just puts a check box out there beside the options already there which are all photos, camera photos, shared photos etc.

sounds like one of those mysterious droid things that will just eventually happen.
