Do I need a certain app to freeze these or is it just done throughout the phone?

Install titanium backup. You can freeze and backup apps from there. That would be the safest thing to do. If freezing an app gives you problems, you can easily un-freeze it. I probably don't have to tell you this but do not go into root and start changing file names. You can easily ruin your phone unless you know exactly what you are doing.

Then just go to the app management and freeze the bloat by hitting disable

No, with ICS you can simply go into app management and disable apps. Not all are able to be disabled, but a good amout are. If something has updates installed you have to select "uninstall updates" first, then disable it.

Easiest way to do it for me is open your app drawer, grab desired app drag up to "more options" select "app info" then select "disable" at the top right

Thanks josh, I learned something new again today. I was only familiar with the play store way and settings-app way.

Lol! I don't think you can go so far as to say that. I bet you know a whole lot of things I don't.

I'm unrooted, and wondering if I uninstall updates and then disable an app, will "other apps misbehave" sometimes as the warning message states? Will the apps keep showing up as needing updates in Play?

No jasmo, you will be fine. The apps they let you disable are safe to disable. The only exception might be disabling an app service where you still actually use the app that it belongs to but it is pretty clear what apps and services go together. If you did find that you went to use a stock app that didn't work right, all you would need to do is go back and enable the necessary apps.

Thanks, Tis. If I do need to reinstall, where would I find the disabled ones listed? I didn't find them listed in either All Apps, or in My Apps in the Play store.

They will be listed in the all apps list at the bottom. Took a bit to discover that one.
