Wtf! Did an uninstall, which of course only rolls it back to the old version. Can't do a true remove.
And it came back, the option.
So then did the update: gone.

So I've done s bunch of stuff. When I roll back to pervious version, the mic is there....but does nothing when I click it.
Rebooted a bunch. Turned off Moto Voice, enabled Google Voice. Cleared cache.
Sigh....

Found, fixed.
If this happens to someone else, try this:
Settings > Language and Input > Current keyboard

Click Choose Keyboards on that screen.

Ensure Google Voice Typing is on.

Voila!

Today's update brings this

What isn't listed that I'm impressed with is the accuracy (or inaccuracy?) of the gesture typing has gotten much better at figuring out what I'm trying to write.
A couple of rubs I don't like is it keeps capitalizing the a when I write out and or other 3 letter words too often and still no forward slash on the main keyboard as a secondary character unless I long press the period key. A backward slash is shared with the W key but no forward !?!?
Delete whole words is more refined as in the number of words deleted is more accurate when you slide from delete key toward your left and the number of letters you cross determines how many words disappear. Before it as harder to control even though it was the same method.
It's another nice update and I'll post back if I notice other differences. I've checked my weather and did a Google search to test it out and it works nicely with only a couple seconds of lag before getting the answers.
