An alternative method for garbage app cleanup that doesn't require using shell is with Titanium Backup. You've got root, so you should have this installed anyway.
It should improve the speed at least a little bit, maybe not even noticeable though. Hard to say, and depends on what you remove. My biggest reason is they are just annoying sitting in the app drawer when I'm looking for apps I actually want.

they way the walk throughs are posted... will this be an easy thing for a n00b to do? as in no programming experience or anything and this is my first droid?
Couple of things I noticed and thought it was worth mentioning
It seems that renaming the 'FileManager.apk' causes problems with the market's ability to uninstall applications... Once I reinstalled it, the market worked fine again.
I also had problems downloading from the market after renaming the 'FMRadioService.apk'. Once again, the problems went away once I reinstalled it (Note, you can remove the FM Radio app by renaming 'FMRadio.apk')

When I do sync the installed apps do not change. Rebooted phone and they are still there. I ran Blockbuster even though I renamed it to Blockbuster.bak....
What gives? Do I have to delete the icon in the installed apps folder? Why is the app running if I renamed the .apk to .bak? Makes no sense...
