I haven't had a chance to read through this whole thread, but wouldn't it be fine to just move these to the SD card, then to a computer so you're not wasting space (instead of just renaming to .bak)?
Also, any updated lists (this list and the one on android forums are a month old, and I figured someone would have found more that can be removed)
And I assume we can use the same methods to get rid of unwanted ring/notification/alert tones and wallpapers?

It's just funny, because I know a lot of people that utilize the car dock and love the simplicity of the interface. Plus, it's not like it's subscription-based or costs any money to use like most of the other apps mentioned.
The stock one is horrible, IMHO. CustomCarHome is awesome though!
Ok, I'm making a list of all the stock apps and whether or not you can rename them. I TAKE NO RESPONSIBILITY FOR MISTAKES OR ANY DAMAGE TO YOUR DEVICE! Please let me know if you find errors or have updates for me. This list should contain all (and only) stock apps and whether or not it's safe to remove them. I'll work on getting the name/purpose of each app so you know what each filename goes to (most are obvious though).
Note: I have not personally tested all of these. I have renamed many of them, but because I do use some of them, I didn't test those (yet at least). This is a list I put together from my list, aldo's list on androidforums, and the list in the OP here.
Just went through my list of apps, and here is what I moved. (moved into a bkup folder instead of renaming so to restore I just have to use the command mv * ../.)

1. Why do you need to use root explorer? With ASTO i can navigate to this folder and there is a rename and a delete option when I long press on the application....
2. What if I just delete with ASTO using this method?
