Yeah most anytime you smoke poultry the skin is unusable. Once it cools fully I peel the skin off and toss it. It basically is turned into plastic and the taste is like fire smoke not a good smokey flavor.

The key is less smoke. Poultry absorbs and holds flavor more different than red meat. Less wood/smoke is better.
