You can do backup and restore of ROMs with clockworkmod.

I have never lost anything on my SD card. Plus contacts are backed up with Google. You can back up pics and files with dropbox. Its free to create an account

Well just keep an eye out for ota updates and you can unroot, get the update, and root again. That's what I plan on doin for the 2.3 (gingerbread) update

Congrats on the successful root and to see about the rom's and all i would check out the Dinc sub-forum and see which roms are out and which one appeals to your needs. I think i have posted a couple links referring to the sub-forum. Just look at them and read the posts about each rom and see what other users have said about the reliability, if its stable or not (stable means like no force closes and such), and what they say about the features. There is a lot to read in the subforums but it will def help you make the decision.
