I'd also start with a Ninja 250,500 or something similar. The new CBR250 looks like a fine starter bike and if I had the money, I wouldn't mind getting one to play around on. I do have a differing opinion on rear brake use on the street. I don't do track days but I have 13+ years of street riding without an accident. I always use front and rear braking on the street. I just think it makes sense. I want as much braking as I can have and as long as you modulate both correctly, then you shouldn't have a problem.
Of course on my current bike it's a moot point as I have a VFR with linked brakes.
Whatever bike you decide on, get the proper training and wear the proper gear and you're gonna love it.
