ok, having a problem installing, I tried to uninstall Rom Manager, but when I hold down X and boot up, it still takes me to a clockworkMOD recovery screen.

Any suggestions?
In order to get rid of an alternate recovery image like ClockworkMOD Recovery or SPRecovery you have to either install the 2.2 update so it'll flash the stock recovery image back in or you'll have to use RSDLite and push a stock SBF file to your phone.
 
Okay, I'm asking the same question as someone else earlier, but I didn't see it answered anywhere.

I installed and rooted with EasyRoot. I've got ROM Manager on here, as well as Metamorph, Titanium Backup, Busy Box and SetCPU.

I do NOT have any custom ROMs installed, no themes, and I've still got the stock kernel. I've changed some stuff with SetCPU, but nothing I couldn't live without.

I made a backup with Titanium backup. Then I deleted some apps I hate and don't want, but that you aren't given an option to uninstall like Twitter, etc

If I want to UNroot (still on the fence about the whole root thing, even though I've done it already, haha) will those apps remain deleted? EasyRoot doesn't require flashing back to stock I don't think. So, what will happen if I unroot with EasyRoot?

Your phone will live on, without any of the bloatware you installed, only unrooted. SetCPU will cease to function, as will any other root-only app.

I believe you follow the instructions in the OP. If that doesn't work, get Astro from the market and do a backup of all your apps you want to keep, SBF a stock 2.1 image back in, then get Astro from the market again to restore your apps. They might not appear as downloads in the market, but that's probably not a big deal at the moment.
 
If I'm rooted, but have done nothing but overclocking, will I get the official OTA update sent by verizon?
That depends entirely on the method you used to root. Easy Root/DM Updater? No problem, even if you installed ROM Manager and flashed ClockworkMOD Recovery or SPRecovery. RSDLite to push SPRecovery followed by installing a rooted ROM? Depends on the ROM. Most have OTAs blocked.

And When I boot up, I don't even get a chance to hold down camera and then up, all I do is hold down X, and it takes me to the clockworkmod recovery screen, how do I delete clockworkmod so I can go back to the normal screen?

Try installing this file as a standard update.zip and see what happens. If it works, great, if not, we'll try something else. If all else fails we'll have to RSDLite an earlier SBF so you can install this normally.
