There's an option right above install zip from sd that says apply update.zip I'm not sure that's the reason for your trouble, but it may be. If you had another update.zip on the sd prior, erase it so there's no confusion

I did have another update.zip on the sd card but deleted it per the instructions. I went ahead and re-flashed per the instructions, this time using the "apply update.zip" you mentioned. Now I am stuck on the Motorola logo, ugh.
I just always mount. The rom should do it automatically, but the only bad experiences i've had (sbf, bootloops) was when I didn't mount. So now I just do it before installing anything.

Like I said, I wasn't sure that would make a difference seeing that's you already flashed the nightly. Who knows though, if you have to sbf, it may give you a clean install. It is the only approved method for cm7. The all in one wasn't recommended by the devs

Yeah, early on in D2 ROM development if you didn't mount System things would just not install/work right. They seem to have fixed whatever scripting error or problem was causing that since then - as noted, I haven't mounted System to install any ROM in quite a while and never mounted System to install Gapps.
However, mounting System certainly won't hurt, and might keep a problem from occurring if something wasn't right.

When I boot into android system recovery it shows;
E:Can't open /cache/recovery/command
at the bottom of the recovery screen.
Options are to
reboot system now
apply sdcard:update.zip
wipe data/factory reset
wipe cache partition
Any reason to do any of these things at this point or am i just SOL?
