Official and unofficial pretty much depends on your point of view... It's like being almost pregnant...
If you're Verizon, anything that doesn't come in the form of a live OTA feed from their servers is unofficial and represents a reason to void your warranty.
Of you're Moto or Google, there are other ways to do the upgrade and still be official for their needs. They don't deal with warranty issues.
If you're a ROM developer, everything has some official Android source in it from somewhere, whether it's in the form of raw code or in the form of leaked executables. No one is writing ROMs completely from scratch.
You need to choose what you want in features, and what you can allow your exposure level to be. That will help you help you determine whether to wait for the actual Verizon OTA or to manually install what's currently available, whether to root, whether to go stock or custom ROM, whether to theme, etc.
